It’s spring time, summer is just around the corner, and we have a lot of seasonal fruits and vegetables to incorporate into our meals: asparagus, avocado, beets, broccoli, spinach, and cabbage are just a few of the delicious treats this season has to offer.

It can often be difficult to understand what vegetables are in season, especially if you live in a big city, since so many of the ones you can buy in a supermarket are imported. To better understand what each month has to offer, check out your local farmers market! We are what we eat, right? So remember that cooking local, seasonal vegetables is healthy and delicious.

Fresh, local vegetables have more flavor and greater nutritional value. Local produce also requires less transportation, making them more sustainable and, often, less expensive.
SOME SIMPLE SEASONAL RECIPES

Nothing says springtime like asparagus risotto. It’s easy to prepare: divide the asparagus stems from the tips, then boil them. Save the tips, and blend the stems to create a creamy mixture. Next, in a saucepan, sauté onion in some butter, add rice, and cook it little by little, gradually adding vegetable broth to make a basic risotto. Finally, add some white wine, let it cook off, and add your asparagus cream. When the rice is almost done, add the asparagus tips.
An even simpler recipe is pasta with broccoli, or, if you’re a fan of meat, the Pugliese classic orecchiette with sausage and friarielli, or broccoli rabe. If you prefer spinach, try dressing spaghetti with some spinach and ricotta cheese: combine ricotta, cooked spinach, parmesan cheese, and some nutmeg to create a delicious sauce.
