Giusti, from generation to generation
The story begins in 1605 with Giuseppe and Francesco Maria Giusti, when they were registered in the Modenese Duke's ledger of local businesses "Salsicciai and Lardaroli." Today at the head of the company are Claudio, Francesca and Luciano. For centuries, the family produced balsamic vinegar for private consumption and also for gifts. The acetaia - where the traditional balsamic vinegar is made and stored - was considered a family heritage. A family member was the master vinegar maker, a specialist who had learned this art's secrets from generation to generation. The balsamic vinegar they produced was so valuable that in 1929, Giusti Balsamic Vinegar became "Supplier of the Royal House of Savoy" a title conceded by the King of Italy Vittorio Emanuele III.
Tradition and innovation
Today this balsamic vinegar is produced in the casks of the Giusti family with the same traditional process. "While protecting the craftsmanship involved in the production and preserving the salient aspects of the brand's history, captured within the faithfully maintained Giusti label, which dates back to the early twentieth century – they say – Acetaia Giusti has also managed to evolve from a commercial and managerial point of view, cultivating a distinct identity and product style, which makes it unique and recognizable."
The magic of Acetaia Giusti
Acetaia Giusti treasures the most extensive collection of historical barrels: 600 barrels from the 1700s and 1800s still produce balsamic vinegar. "The older the barrel, the better the product will be - as the essences from the wood and the balsamic aromas that have matured together over the centuries are united." Giuseppe Giusti, the founder, was indeed a pioneer, codifying the rules for the "perfect balsamic vinegar" in 1863 (choice of grapes, quality of the casks, aging time).
