Nestled amidst the enchanting landscapes of the eastern hills of Friuli, Acetaia Midolini is a brand steeped in history and renowned for its exceptional balsamic products. The journey of this extraordinary brand began in a humble granary store, once used by local farmers. In the 1950s, it was meticulously restored while preserving its historic charm, embodying the perfect blend of tradition and experimentation.

Today, Acetaia Midolini holds a distinguished place in history, having earned the remarkable title of the largest acetaia in the world, as recognized by the Guinness World Records. This prestigious accomplishment is a testament to the brand's commitment to quality, tradition, and the art of crafting exceptional balsamic condiments.

Where Dreams Become Flavorful Reality

Acetaia Midolini is more than just a place; it's a sanctuary where the dream of creating exquisite balsamic dressings from precious wine must has come to life. Here, emotions, dreams, and innovative projects are shared, and it's where their balsamic products take on their distinct shape, color, and, above all, flavor.

Every day, amidst rows of barrels varying in size from 75 to 10 liters, Midolini's expert artisans walk with precision, ensuring that the balsamic ages flawlessly, undisturbed by any external influences.

The Midolini Method: Craftsmanship at Its Best

At the heart of Midolini's success is their artisanal approach to balsamic production. They exclusively craft balsamic condiments from the finest raw materials. The journey begins with the selection of the company's grapes, which are destemmed and pressed to extract fresh must. The must is then meticulously cooked at high temperatures for up to 60 consecutive hours.

A significant portion of the must finds its way into wooden vats, embarking on a journey of aging and refinement in batteries made of seven different precious woods. The remaining must is reserved for bottling their esteemed Gourmet line.

Unlocking the Health Benefits of Midolini Balsamic

Recent research conducted by the University of Udine and Trieste has unveiled the nutraceutical properties of Midolini Balsamic. Rich in antioxidants and polyphenols, Midolini Balsamic is known for its anti-inflammatory, cardioprotective, and antioxidant properties. These polyphenols combat the harmful effects of free radicals, slowing down cellular aging.

The balsamic products' low acidity, at less than 5%, offers a pleasing taste that appeals to all, including a young audience. Rich in mineral salts, Midolini's balsamic products aid in digestion and serve as remineralizing agents for the body.

The Super Premium Line products are particularly suited as a digestive after meals.

A Legacy of Passion and Excellence

The Midolini family's legacy in balsamic condiment production spans over half a century. Founded by Lino Midolini, the brand's story began with just 25 barrels of selected fine woods. It was here that the tradition of cooking and aging autochthonous grape musts was embraced, harking back to a Friulian tradition rooted in the ancient Roman colonies of Aquileia.

Lino's vision, characterized by a deep commitment to quality, tradition, and love for the land, led the company to achieve a world record, earning a place in the Guinness Book of Records as the largest acetaia on the planet.

Gloria, Lino's daughter, carries forward this rich legacy by infusing modernity into the brand, collaborating with universities and celebrated chefs to discover innovative tastes and products. Angelica, the third-generation Midolini, oversees the company's marketing and branding strategies.

The Vineyards

Acetaia Midolini is a single estate with 100 hectares of land, including 35 hectares of vineyards. Situated exclusively in hilly regions, these vineyards benefit from the unique terroir of Colli Orientali del Friuli, a designated origin of origin (DOC) that protects the region's characteristics, creating a superb environment for high-quality grapes.

The terrain, shaped by the ancient seabed of the Adriatic Sea, blends layers of marl and sandstone, influenced by Mediterranean and Central European cultural intersections. This fertile ground serves as the canvas for Acetaia Midolini's journey towards crafting balsamic excellence.
