Here, Antonio Mattei, a baker and pastry chef from Prato, opened his biscuit factory and shop, starting to manufacture and sell "cantucci, cookies, and other goods," as stated on the shop sign. It was 1858.

Antonio Mattei, the founder of Biscottificio Antonio Mattei, was a craftsman of humble origins, but he played a significant role in the history of Italian cuisine. By making some variations to the almond cookie recipe, he created a dry biscuit that would become the traditional Biscotto di Prato.

In just a few years, Antonio Mattei's business received numerous important accolades, and it continues to earn them today.
