Tribute to The Glorious Mexican Culture

Originally this day celebrates the anniversary of Mexico's victory over the French during the famous Battle of Puebla in 1862. In Mexico, Cinco de Mayo hasn't celebrated the same way as it is in the U.S. Definitely, it's not a daylong celebration where everyone drinks. Nevertheless, in the US May 5th is the unofficial holiday honoring the rich and magnificent Mexican culture. Cinco de Mayo has evolved into a massive celebration for Mexican-American restaurants and bars. If you live in the U.S., May 5th is the day to indulge in a great happy hour with margaritas, tacos, or delicious guacamole. However, we recommend celebrating Mexican culture by trying authentic specialties that you've never tasted before.

Our Take on Cinco De Mayo

We at Magnifico also want to honor the beautiful Mexican culture by suggesting you a recipe with one of the most beloved ingredients, namely avocado. Today we present our fusilli with avocado pesto. Let's start with a simple premise: avocado pesto is delicious and very easy to prepare. You can use it to dress pasta (as we love to do) or spread it on bread, croutons, or grilled bruschetta. Another good reason to try this recipe is that you can also offer this pesto to your vegan or vegetarian friends. It is a delicate cream and can be prepared in minutes. In short, you can try your hand at this recipe even if you are not an experienced cook. We recommend choosing ripe avocados. Do not forget that not only do avocados taste great, but they are also very healthy, coming with some great health benefits. Avocados, native to Mexico, are packed with healthy fats, fiber, vitamins, and minerals. The truth is that the health benefits of avocados are literally endless!

The Easy Recipe

For this recipe, you will need two ripe avocados, 1/2 lime, ½ cup walnuts or pine nut, 5 tablespoons extra virgin olive oil, 2 cloves garlic, and a pinch of salt. Making avocado pesto takes very little time and effort. The first thing to do is peel the avocado and remove the stone. At this point, cut the fruit into pieces. Put the avocado in the mixer and add the rest of the ingredients: oil, garlic, pine nuts or walnuts, juice of half a lime, and salt. Now blend until it becomes a smooth and creamy sauce. Your pesto is ready! Now cook the pasta. We recommend fusilli because fusilli are perfect with this type of sauce. On our website, you can find an excellent selection of pasta for avocado pesto. Once the pasta is cooked (as always, al dente!), drain it and add the pesto, mixing very gently. It's time to plate and serve! The last touch is adding a few walnuts to decorate your dish.
