We call it “Estate” aka Summer, the best season of the year! We Italians literally love this period because it means sun, beaches, relaxation, and indulging in a lot of aperitivi with family and friends!

CHILLED TOMATO SOUP
Vegetable-based soups are a great choice if you want something light to help your fight with the scale! Soups - “zuppe” – can also be really tasty. They promote weight loss (if you prepare them with the right ingredients!). Our favorite is the chilled tomato soup! Packed with nutrients, fibers and absolutely delicious. You should use the best Italian tomatoes! Our first choice is Agromonte’s Passata of Cherry Tomato, made with a freshly squeezed juice of cherry tomatoes. Heat some olive oil (we recommend Redoro Extra Virgin Olive Oil) in a large sauce pan on medium-to-high heat. Add some onion into the pan, cook for a minute and then pour your Pasta. Let it cook for 15 minutes, stirring occasionally . Remove from heat, add some chili pepper (if you like a slightly spicy twist), salt, and pepper. Let it cool . Once it is cold, put it in the refrigerator to chill for at least 1-2 hours. Serve with a garnishment of olive oil and basil leaves.
WATERMELON SALAD
Few calories, excellent taste…watermelon is the king of summer treats. This fruit is delicious but also healthy with a high percentage of water, excellent nutrients and fibers. Here is a great way to make a watermelon salad: watermelon, pecorino cheese cubes, fresh onion, pine nuts, extra virgin olive oil, and mint leaves. Try it, you will thank us!
GRILLED VEGETABLES
We all know it: veggies are the healthier food choice. Raw, cooked, steamed or even grilled! Grill your favorite vegetables and just add some delicate and flavorful Peranzana extra virgin olive oil. Sprinkle with salt, pepper and add some oregano. Our favorite summer veggies are eggplants. Easy to grill and a perfect accompaniment to meat or fish.
ICED COFFEE
Italians drink coffee literally always. We say that we are “caffeine-dipendenti,” caffeine-addicted. During the summer we love “caffè freddo,” our chilled delicious espresso. The Italian recipe is pretty simple: use your moka for a perfect shot of espresso, let it cool, add sugar and let it melt, add an ice cube and shake it. Make sure to choose an excellent brand coffee.
